Bacon Paste BBQ Chicken Kebabs

These bacon paste bbq chicken kebabs are absolutely one of the best things to come off our grill recently. Well, besides my husband’s fabulous ribs, of course!

It may be a weird method and make you take a pause, but you must try this recipe.

Smoky bacon and barbecue grilled chicken is a bacon lover’s dream. My husband talked about this chicken for days.

Use the food processor and whir up the bacon paste recipe. Strange, right?

In a food processor, combine the kosher salt, pepper, garlic powder, onion powder, paprika, cayenne, dark brown sugar, and raw bacon. Pulse until completely smooth. Transfer to a large bowl.

Stir in 2-3 tablespoons of your favorite barbecue sauce to combine.

Add the meat pieces, mix with your hands, and rub the paste to coat the chicken until it’s completely coated. This step is a little tricky. You might want to wear gloves for this part; I did.

You can use chicken breast also just be sure to adjust the grilling time accordingly. They tend to dry out way faster.

Cover and marinate for at least 1 hour.

Preheat the grill to medium-high heat.

Skewer the chicken and grill for about 5 minutes per side or until nearly cooked through.

If using bamboo skewers or wooden skewers, be sure to soak the skewers in water for 30 minutes to prevent them from burning.

Brush with the barbecue sauce and cook for another minute on each side.

Ingredients
 

  • 2 lbs boneless skinless chicken thighs, cut into 1″ pieces
  • 8 oz barbecue sauce
  • 2 teaspoons kosher salt
  • 1 teaspoon fresh ground pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons paprika
  • 1/4 teaspoon cayenne
  • 3 tablespoons packed dark brown sugar
  • 6 slices uncooked bacon, cut into small pieces
  • 2-3 tablespoons barbecue sauce

Instructions

  • In a food processor, combine the kosher salt, pepper, garlic powder, onion powder, paprika, cayenne, dark brown sugar, and bacon. Pulse until completely smooth. Stir in 2-3 tablespoons of barbecue sauce to combine.
  • Put the chicken pieces in a bowl and then rub with the bacon paste. Once well coated, cover and marinate in the refrigerator for at least 1 hour.
  • Thread the chicken pieces onto skewers.
  • Light the grill and heat to medium-high.
  • Place the kebabs on the preheated grill. Cook for about 5 minutes per side, or until nearly cooked through.
  • Brush the kebabs with the barbecue sauce and cook for an additional minute or two on each side.
  • Serve with the remaining BBQ sauce, if desired.

Notes

You can use chicken breasts but you might need to adjust the cooking time. We prefer thighs, they don’t tend to dry out as quick.

  2. I made this tonight and … HOME RUN! I don’t usually review recipes but I had to on this one! 5+ STARS! I will be serving this recipe for a graduation party. NO CHANGES NEEDED. I prefer thighs but I used breasts just to see how they would turn out and they came out great! Pull when the pieces are 157-160, pan and cover with foil and they will come on up to temp. Thank you for this recipe! Now on to find new uses for BACON PASTE!5 stars

  4. After saving this recipe nearly 6 months, I finally made these for the 4th of July. Used breast meat as we had that on hand already. OMG, I will be making this again.

    Originally I saved this for the bacon paste which I wanted to add to my dry rubbed smoked wings, I will certainly be doing a combo of my standard dry rub along with the addition of the paste for some future wings, until then I plan to re-do this with thigh meat as suggested.5 stars
