Beef Spice Mix:
  • 2 teaspoon Chili powder
  • 1 1/2 teaspoon Paprika
  • 1 1/2 teaspoon Cumin
  • 1 teaspoon Onion powder
  • 3/4 teaspoon Garlic powder
  • 1/2 teaspoon Sea salt
  • dash cayenne pepper
  • 1 pound ground beef
  • 1/4 cup water
  • 12 ounces tortilla chips
  • 1 15-ounce can black beans, drained and rinsed
  • 1 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1 medium tomato, diced
  • 2-3 green onions, diced
  • 1 jalapeno, thinly sliced
  • 2 tablespoons chopped fresh cilantro leaves
  • sour cream, avocado, salsa
  1. Preheat oven to 400 degrees F.
  2. Cover a baking sheet with heavy-duty foil, spray lightly with cooking spray.

  3. Mix together in a small bowl the chili powder, paprika, cumin, onion powder, garlic powder, sea salt and cayenne pepper.
  4. Heat a large skillet over medium-high heat. Add ground beef and cook until beef has browned, about 3-5 minutes, crumble the beef as it cooks. Drain excess fat. Stir in seasoning mix and water. Cook another 2-3 minutes.
  5. Lay tortilla chips in a single layer onto the prepared baking sheet. Top evenly with ground beef, black beans, and cheeses.
  6. Place into the oven and bake until heated through and the cheese melts about 5-6 minutes.
  7. Serve immediately, topped with tomato, green onion, jalapeno, sour cream, cilantro, avocado, and salsa.
