Watermelon Mojito Recipe

A light, refreshing cocktail to beat the summer heat!

Ingredients

  • 1/2 cup watermelon, seeded chopped
  • ½ lime, juiced
  • 4 mint leaves
  • ice
  • 1 ounce rum (or more)
  • club soda

Instructions

  • In a blender, process watermelon until liquefied.
  • In the glass you are using, muddle together the lime juice and mint leaves. Pour in watermelon. Fill the glass with ice, top with rum and club soda.
  • Garnish with mint leaves and watermelon wedge if desired.

Notes

If the watermelon is not very sweet you can add some simple syrup or agave nectar.
