Ingredients

  • 10 lb smoked cured ham
  • 1 cup firmly packed dark brown sugar
  • 1/4 cup prepared whole grain mustard
  • 2 tablespoons cider vinegar

Instructions

  • Preheat oven to 325 degrees
  • Score top of the ham into a diamond pattern.
    10 lb smoked cured ham
  • Place the ham on a rack in a roasting pan, cover the pan with aluminum foil, and bake for 1 hour.
  • Remove the foil and continue to bake uncovered for 30 minutes.
  • In a bowl combine the brown sugar, whole grain mustard, and vinegar.

  • Spread glaze evenly over ham. Bake uncovered for another 35 minutes.
  • Transfer to a platter, tent loosely with aluminum foil, and let rest for 15-20 minutes before carving.

Notes

If using spiral-cut ham be careful not to overcook and dry it out. Add about 1 inch of water to the bottom of the pan.
Use a digital meat thermometer to avoid overcooking. It should read 140 degrees F.
Allow 10-12 minutes of cooking time per pound of meat. If your ham is larger or smaller adjust the cooking time accordingly.
Storing and Freezing - Let the ham cool completely, place it in an airtight container, and refrigerate for up to 4 days. Or freeze for up to 3 months.
