Who knew you could take roasted brussels sprouts to a whole new level? Adding honey butter and bacon to an already enjoyable vegetable elevates it to something else.

I won’t lie. I was put off of brussels sprouts for a long time. I am sure some sort of childhood dinner table experience turned me off of them.

Leigh made a great roasted brussels sprouts dish, and I was sold. But after eating them the same way each time, I wondered what you could do to take it up a notch.

After some digging around and experimenting, I came up with this dish, which didn’t disappoint.

So if you want to change the brussels sprouts up a bit, give this a try. You won’t be sorry.

These bites of yummy goodness pair great beef roast, prime rib, and smoked chuck roast. It would also be a great addition to any holiday spread featuring a roast turkey.

Ingredients Needed

Nothing crazy about this recipe. That’s what makes this dish totally worth making.

  • 1 1/2 – 2 lbs Brussels Sprouts
  • 6 Slices of bacon – Thick cut or thin, totally up to you
  • Butter – Room temperature
  • Honey
  • Kosher salt
  • Pepper

How To Make Roasted Brussels Sprouts With Honey Butter And Bacon

Preheat the oven to 375 degrees Fahrenheit.

Cook 6 pieces of bacon in your preferred manner. Reserve 2 tablespoons of bacon grease.

Crumble the bacon when it is cool enough to handle and set aside.

Cut approximately 24 medium brussels sprouts in half and place into a bowl. Remove any outer leaves that look bruised.

Pour the reserved bacon grease over the brussels sprouts and sprinkle with 1/2 teaspoon of salt and a 1/4 teaspoon of fresh ground pepper.

Mix or toss gently until the brussels sprouts are covered equally.

Line a baking sheet with parchment paper and place the brussels sprouts flat-side down. Roast for 30 minutes, turning them once while they are roasting.

While the brussels sprouts are cooking, prepare the honey butter.

Add two tablespoons of softened butter (room temperature is fine) and two tablespoons of honey to a bowl. Whisk until combined well.

Remove the brussels sprouts from the sheet pan after roasting them for 30 minutes and have a slight char to them.

Season with additional salt and pepper to taste, and serve!

This side dish is so easy to throw together. And while we have enjoyed roasted brussels sprouts for years, these very easy and quick steps take a pretty basic side up several notches.

Why are my brussels sprouts not crispy?

The heat isn’t high enough. Run the oven temperature at least 375 degrees Fahrenheit to achieve decent crispiness.

Should I cut brussels sprouts in half before roasting?

Yes, this allows more of the surface to be coated in oil, and these smaller pieces will roast faster than the whole brussels sprout.

Should I boil my brussels sprouts before roasting them?

This recipe does not require boiling as they’re not that large. If you do have large brussels sprouts, parboiling them will give you a jump on the cooking process, making sure they are tender in the middle.
