Breakfast Sausage – Pick your favorite. For a spicy kick, try the spicy sausage.

Rotel – This stuff gives the cheese dip the flavor that it needs. Again, if you want spicier, get the spicier version

How To Make Velveeta Cheese Dip (Rotel Dip)

This recipe is as easy as it can get. Basically, we brown the sausage, combine it with the Velveeta cheese and Rotel, and microwave for a few minutes until ready. Easy peasy!

  • Break up the sausage and cook over medium high heat. I like to keep my sausage in big chunks and get some good color on them, flip and sear the other side, then break it into smaller pieces.

  • Next, cube up the Velveeta cheese and place it into a microwave safe container. Add the Rotel to the cheese.

If you like your cheese dip thick, drain the Rotel. If you want to keep it thinner, add all the contents of the Rotel can to the cheese. Your preference.

  • When the sausage has been cooked, place it in a paper towel lined bowl to soak up the fat, then dump it into the container with the Velveeta cheese and Rotel.

  • Place the container with all the ingredients together into the microwave. Microwave it for a minute at a time, mixing and combining well each minute. When it’s well combined and melted, remove and serve with tortilla chips.
