Fresh Strawberry Pie

Strawberries were on sale so we decided to make pie!  This fresh strawberry pie recipe is really simple.  The next time you find strawberries on sale buy a bunch and make this easy recipe. If you are planning on making the pie crust yourself, purchase a back up.  I wish I had. Instead I had to make another trip to the store.

I did attempt a homemade crust but I failed yet again.  I WILL conquer homemade crust!!  I just have to keep trying.  The next time I make this pie I am going to cut the strawberries smaller.

Easy Fresh Strawberry Pie
Recipe type: Pies
  • 2 lbsFresh strawberries
  • 1 Deep dish pie crust (store bought or homemade)
  • 1 c. Sugar
  • 1 c. Water
  • 4 Tbl. Cornstarch
  • 1 box strawberry jello powder
  1. Prepare the pie crust as directed.
  2. Set aside.
  3. Clean & trim strawberries.
  4. Add strawberries to the pie crust.
  5. In a saucepan combine water, sugar and cornstarch.
  6. Boil until clear.
  7. Remove from heat and add the strawberry jello powder.
  8. Pour the mixture over all the strawberries.
  9. Refrigerate the pie until ready to serve.

The pie looks absolutely wonderful but I really wanted to commiserate with you on making homemade pie crust! Mine are always tasty but structurally a complete disaster! The woes of baking. We’ll both get it down one day I’m sure!

I love fresh strawberry pie! I use Danish Dessert and actually prefer the rasp. over the strawberry. Seems to be not quite as sweet. Your recipe sounds yummy. I’ll have to give it a try. Thanks for sharing it with SYC.
